WEND INSPIRED RECIPE THANKSGIVING EDITION: GRAM’S CORN PUDDING

In recent weeks, I’ve taken a step back from traveling and headed back home to spend some time with family and friends and prep for the holidays. It has also given me a chance to relax and reset after all the running around I do.

Don’t get me wrong, I love traveling and every minute that I get to spend away on far off adventures, but there is something special about returning back to all the comforts of home during the holidays. From decorating the house, to getting together with friends to cooking traditional dishes shared over laughter with loved ones, this truly is my favorite time of year.

This Thanksgiving, in honor of the holiday, I decided to share one of my favorite family recipes with you all, my gram’s corn pudding. It is simple and sweet and I hope it brings a little joy your way as it has for me all these years. Below is the wend inspired recipe Thanksgiving edition: corn pudding inspired by my grandmother, Barbara.

Corn pudding recipe

WHAT YOU’LL NEED:

  • 1 16oz can of cream style corn
  • 1 16oz can of whole kernel corn (drained)
  • 1 cup of light sour cream
  • 1 stick of salted butter (melted)
  • 1 box of corn muffin mix
  • 1 egg (beaten)
  • Paprika (for garnish)

DIRECTIONS:

  • Combine wet ingredients in a large mixing bowl.
  • Gradually stir in dry ingredients until thoroughly combined
  • Pour mixture into 8×8 greased baking dish
  • Sprinkle with paprika
  • Bake at 350 for 45 minutes or until golden brown
